Another thing to point out is that separate channels can be things other than "spot" - die lines, embossing, or foil. So you may want to consider CMYK, then CMYK + 2 (for 6 cylinder presses, pretty common), and then CMYK + ? (maybe 4 or more). Then see what the demand is for DeviceN output profile support.
