The only colors that can be changed in a mesh gradient are the patch
corner colors using the cairo_mesh_pattern_set_corner_color_rgb/rgba
functions as described here:

Cairo doesn't provide a user interface. Any user interface for
manipulating mesh gradients needs to be implemented in Inkscape.
